Carrot Pudding

I am very happy to participate in the FIL - MILK event conducted by my dear friend sanghi.
and this is my recipe for the event.




Ingredients:

Carrots - 500gms (grated)

Milk - 3-4 cups

Sugar - 3 cups

Ghee - 3 tsp

Cardomom - 3 nos (mashed)

To garnish:

Cashewnuts, raisins, walnuts

Method:

1) Heat milk in a pan, when it is above to boil, simmer for 20 mins (keep stirring in between).

2) Heat another pan, put ghee and the grated carrots and fry for 5-6 minutes.

3) Grind the fried grated carrots, 4-5 tsps of milk and sugar into a fine paste.

4) Add the above mixture in the boiling milk (step 1) , add cardomom and keep stirring till it becomes thick.

5) Garnish with nuts. Serve hot or cold.

Scrambled Egg



Ingredients:

Eggs - 6-7 nos

Small onions - 7-8 nos (finely chopped)

Tomato - 1 no (finely chopped)

salt to taste

tumeric powder - 1/4 tsp

red chilly powder - 1/2 tsp

mustard seeds - 1/2 tsp

Method:

1) Beat the eggs with a spoon or fork. Add little salt to it and beat it till bubbles form on surface.

2) Heat oil in pan. Add mustard seeds, when it starts to pop, add the chopped small onions and saute for 3-4 minutes till it becomes soft.

3) Now add chopped tomatoes and saute for a minute. Add tumeric powder, red chilly powder and little more salt. Saute till raw taste goes off and the tomatoes are well-cooked.

4) Now add the beaten egg slowly. Keep stirring till the egg mixture appears scrambled. serve hot.

Sweet Kozhukatai





Ingredients:

Rice flour - 3 cups

Jaggery - 2 cups (grated)

Coconut - 2 cups (grated)

Method:

1) Mix rice flour with 2 cups of water and make it a stiff batter. (like the one we make for chapathi)

2) Mix the grated jaggery and coconut together. Keep aside.

3) Spread little amount of the rice flour batter in hand. Stuff in the jaggery - coconut mixture in it. and make it in small oval shapes.

4) Steam the kozhukatai in idly cooker for 15 - 20 minutes. Serve hot.

Bread egg toast



Ingredients:

Bread - 3 nos

Egg - 3 nos

Tomato - 1 (finely chopped)

Onion - 1 (finely chopped)

Redchilly powder - 1/2 tsp

Jeera powder - 1/2 tsp

Salt to taste

Tumeric powder - 1/4 tsp

cucumber - dice cut

Method:

1) Beat the egg with a pinch of salt in a bowl till bubbles form on surface and keep aside.

2) Heat oil in pan, add onions and saute till it turns brown and soft. Add redchilly powder, tumeric powder, salt and jeera powder and saute it the raw taste goes off.

3) Add the chopped tomato and saute for 2 minutes. Now add the beaten egg and saute for 4-5 minutes till the egg is cooked.

4) Toast breads in a tava till it turns brown on both sides. Put the egg masala in between the 3 breads and serve hot. Garnish with cucumber on top.

Ulli Theyal (small onion - coconut curry)

Ingredients:

Small onions - 20 nos (cutted into 2 halves)

Coconut - 2 cups

Round chillies - 3

mustard seeds - 1/2 tsp

curry leaves

salt to taste

drumsticks - 2 (cutted)

redchilly powder - 1 tsp

coriander powder - 1 tsp

tamarind - large lime sized (soaked in water for 10 minutes)

Method:

1) In a kadai, add 3-4 small onions and coconut. Fry till coconut becomes brown. Now, off the stove and add redchilly powder, curry leaves, coriander powder. Keep stirring for a minute.

2) Grind this coconut mixture as paste by adding 1/3 cup of water.

3) Heat oil in pan, add mustard seeds and round chilles. After spluttering, add remaining small onions and fry till it turns brown.

4) Now add drumsticks and tamarind juice. (Small onion-drumsticks mixture should be floating in tamarind juice)

5) Add salt and allow it to boil. When drumstick is fully cooked, add the coconut mixture and saute for 10 minutes till the raw taste of masala's goes off. Serve Hot.

Okra kootu (ladies finger kootu)

Ingredients:

Ladies finger - 1/2 kg (slice cut)

tamarind - marble sized

red chilly - 1 no

mustard seeds - 1/2 tsp

cumin seeds - 1/2 tsp

orid dal - 1/2 tsp

curry leaves

asafoetida powder- 1/4 tsp

tumeric - 1/4 tsp

salt to taste

Method:

1) Soak tamarind in 1/3 cup of water for 10 minutes.

2) Heat oil in pan, add mustard seeds, asafoetida, red chilly, curry leaves, orid dal and cumin seeds. After spluttering, add the cutted ladies finger.

3) Stir once, add tumeric powder and tamarind juice, close the lid.

4) When the ladies finger is almost cooked, add salt. stir till all the tamarind juice evaporates and the raw taste goes off. serve hot.

Simple Rice sweet



Ingredients:

Rice - 1 cup

Jaggery - 1 cup (grated)

Coconut - 1 cup (grated)

Method:

1) Fry rice in a pan for a minute, grind it (it should not be powdered) in mixie.

2) Now mix the grinded rice, jaggery and coconut together in a bowl. Keep it marinated for 1/2 hour and then serve.

Ingredients:

Cabbage - 1/2 kg (finely chopped)

redchilly - 1

mustard seeds - 1/2 tsp

cumin seeds - 1/2 tsp

curry leaves

salt to taste

coconut - 1 cup

small onions - 2-3 nos

green chillies - 2 nos


Method:

1) Heat oil in pan, add mustard seeds, cumin seeds, red chilly and curry leaves. After spluttering, add the chopped cabbage, salt and 1/3 cup of water. close the lid.

2) Grind coconut, green chillies and small onions into a fine paste.When the cabbage is fully cooked, add the coconut paste, saute for a minute. serve hot.

Bread - 5- 6 nos

Sugar - 1 cup

ghee - 1 cup

Method:

1) Spread ghee in front and back side of the bread. sprinkle sugar on both sides.

2) Now heat the pan and toast the bread on both sides till it becomes little golden.

Peanut curry



Ingredients:

Peanuts (shelled) - 1 cup

capsicum - 1 no (cutted)

tamarind - marble sized

coconut milk - 1 cup

redchilly powder - 1 tsp

coriander powder - 1 tsp

gram flour - 1/2 tsp

asafoetida powder - 1/2 tsp

mustard seeds - 1/2 tsp

cumin seeds - 1/2 tsp

curry leaves

salt to taste

red chilly - 1

coriander leaves


Method:

1) Soak tamarind in 1/3 cup of water for 5 minutes.

2) Heat oil in pan, add mustard seeds, cumin seeds, asafoetida powder, redchilly and curry leaves. After spluttering, add tamarind pulp and salt.

3) Now add cutted capsicum, peanuts, cover the lid and allow it to boil. When capsicum and peanuts are half cooked, add redchilly powder, coriander powder, gram flour, stirr well and let it boil till the raw taste goes off.

4) At last add coconut milk, simmer and keep it for 5 minutes more. Now garnish with coriander leaves and serve hot with rice or rotis.

Red chilly chutney



Ingredients:

Red chillies - 6-7 nos

Mustard seeds - 1/2 tsp

Asafoetida powder - 1/2 tsp

chana dal - 1 tsp

small onions - 1/2 cup

tomato - 1 (chopped)

salt to taste

Method:

1) Heat oil in pan, add mustard seeds, asafoetida and chana dal. After spluttering, add redchillies and saute for a minute.

2) Add small onions, tomato and salt. Saute for 2 minute till fully cooked. Grind it to a paste. Serve hot with idly, dosa.

Moong dal and rice sweet

Ingredients:

Moong dal - 1 cup

Rice - 1/2 cup

Milk - 1 cup

Jaggery - 2 cups

Cashewnut - 2 tsp

raisins - 2 tsp


Method:

1) Fry moong dal in a pan for 2 minutes. Keep aside.

2) Fry rice for 2 minutes, mix fried moong dal with rice in pan. Add 2 cups of water and let it boil.

3) When rice is half cooked, add milk. When milk becomes half, add jaggery and 2 cups of water and stir well.

4) Stir at regular intervals till the mixture becomes like a paste. Garnish with cashewnut and raisins. serve hot.

Tamarind Rice

Ingredients:

Large Lime sized tamarind

mustard seeds - 1/2 tsp

fenugreek seeds - 1/2 tsp

red chillies - 5-6nos

coriander seeds - 1/2 tsp

curry leaves

urad dal - 1 tsp

chana dal - 1 tsp

peanuts - 1/2 cup

cooked rice - 1 bowl

salt to taste

Method:

1) Soak tamarind and salt in water for 10 minutes. In another cup, soak fenugreek seeds, coriander seeds and red chillies in water for 10 minutes.

2) Grind the above contents into a fine paste with 1/3 cup of water.

3) Fry peanuts in a pan for 2 minutes and keep aside. Heat oil in pan, put mustard seeds, red chilly- 2, chana dal, urad dal, curry leaves and fry till dals turn golden.

4) Add the grinded mixture, peanuts and little more salt with 1/2 cup of water and keep stirring. Stir till the content becomes like a paste.

5) Add this paste to the cooked rice little by little to prevent lumps. Garnish with coriander leaves. Serve hot.

Dal curry with yam

Ingredients:

yam - 1/2 cup (cut into cubes)
toor dal - 1 cup
tamarind - marble sized
salt to taste
tomato - 1
green peas - 1/2 cup
tumeric powder - 1/2 tsp
mustard seeds - 1/2 tsp
curry leaves

For spice paste

coriander seeds - 1 tsp
cumin seeds - 1 tsp
fenugreek seeds - 1/2 tsp
asafoetida - 1/2 tsp
chana dal - 1 tsp
urad dal - 1 tsp
curry leaves
red chilles - 3

Method:

1) Pressure cook the toor dal, green peas, yam, tomato (cutted) with 1 cup water and keep aside
2) soak tamarind in a cup of water and extract juice frm it. Heat oil in pan, add all ingredients of spice paste, fry for 2-3 minute. grind it with little water. keep aside.
3) Heat the dal in cooker, adding tumeric and salt. Now add tamarind juice and spice paste and stirr well for about 5 minute (in simmer).
4) cook it till the raw taste goes off. Now heat oil in another pan, put mustard seeds, curry leaves. after spluttering, add this to the above dal curry. serve hot.

Aravana payasam (rice payasam)

Ingredients:

Rice - 1 cup

ghee - 2 cups

dry grapes - 1/2 cup

cashewnuts - 1/2 cup

elachi - 4 nos

jaggery - 2 cups

coconut (grated) - 1 cup

Method:

1) Grate jaggery and keep aside. Heat water in pan, add rice and let it boil. when rice is half cooked, add the grated jaggery and stir well.

2) add 1 tsp ghee and keep stirring. In separate pan, add ghee (1 tsp), dry grapes, cashew and fry till golden. keep aside. Fry coconut in the same pan with 1 tsp ghee till coconut turns brown.

3) stir the jaggery - rice content at regular intervals till the water becomes half. add 1 tsps of ghee at regular intervals. Now add the fried coconut, drygrapes, elachi and cashew in it and keep stirring.

4) stir the payasam, until it becomes like a paste. serve hot.

Curd curry with cucumber



Ingredients:

Sour curd - 2 cup

gram flour - 1/2 cup

green chillies - 2

ginger - 1/2" (grated)

redchillies - 4

fenugreek seeds - 1/2 tsp

salt to taste

cucumber - 1 cup (cut into cubes)

mustard seeds - 1/2 tsp

curry leaves

Method:

1) For spice powder - heat oil in a pan, fry fenugreek seeds and redchillies for 1 minute. grind them and keep aside.

2) Add gram flour, tumeric and salt in sour curd, blend it well and keep aside.

3) Heat water in a pan, add green chillies, grated ginger and cucumber. when it comes to boil, simmer and add the curd content and stir for 2-3 minutes.

4) Now add the spice powder and stir for 1 minute.

For tempering:

5) heat oil in pan, add mustard seeds and curry leaves, after spluttering, add it to the curd curry.

Ingredients:


Rice flour - 1 cup

rava (sooji) - 1/4 cup

coconut grated - 1 cup

salt to taste

bengal gram - 2 tsp

asafoetida powder - 1/4 tsp

oil for deep frying


Method:

1) Mix all ingredients except oil in a bowl, gradually adding water to make it a stiff batter.

2) heat oil in a pan. Wet hands, roll the batter into a size of a small marble and put it in the oil.

3) fry till it becomes golden brown.
