Hello friends,

WISH U ALL A VERY HAPPY AND PROSPEROUS NEW YEAR 2010.


Ingredients:

Green Gram - 1 cup (green moong dal)

Jaggery - 1 cup (grated)

Maida - 2 cups


Method:

1) Boil water in pan, add the green gram. When it appears fully cooked, add the grated jaggery to it and stir well till it gets completely dissolved.

2) Simmer and stir at regular intervals till it becomes thick. Set it to cool.

3) In a bowl, add maida and 1/2 cup of water, mix it well. Keep aside.

4) Heat oil in pan, make small balls of the green gram, dip it in the maida and deep fry in oil (in batches). Serve hot.

Cashew Butterscotch Chocolate

Ingredients:

Cocoa powder - 1/2 cup

Cashew nuts - 1/2 cup (crushed)

Demerara sugar - 1 cup

Ghee (or) Butter - 1/2 cup

Milk - 1/2 cup

Cream - 2 tsp


Method:

1) Heat pan, add the demerara sugar and stir in high flame with 1 tsp of water till it gets completely dissolved.

2) Now add ghee, cocoa powder and milk to it and stir till it starts separating from pan.

3) Now simmer and add the cream to it while stirring continuously.

4) At last add the crushed cashew nuts to it and stir well.

5) Grease the butter paper with ghee, pour in the content, roll it to make small balls. Freeze it for 1/2 hour, remove the chocolate from foil and enjoy!

Apple Jam

Ingredients:

Apple - 1 no (cut)

Sugar - 1 cup

Citric acid - 1 pinch

Cloves - 1/2 tsp (powdered)



Method:

1) Cook the apple in 1/3 cup of water until fully cooked. Grind it to paste.

2) Heat the pan, put the apple paste and stir well, add sugar and stir till all the sugar dissolves.

3) Add the cloves powder and citric acid to it and stir till it appears a jam like consistency. Store it in an air tight container.

Shankar pali







Ingredients:

Wheat flour - 1 cup

Sugar - 2 cups

Ghee - 1/2 cup


Method:

1) Combine wheat flour, 1/2 cup sugar, ghee and water to make a stiff dough. Keep aside for 1/2 hour.

2) Heat water in pan, add the remaining sugar and stir till it gets completely dissolved and appears as sugar syrup.

3) Heat oil in another pan for frying, take small pieces of dough, roll it in the roti maker, cut into small diamond shaped pieces and fry in the oil till it becomes brown on both sides.

4) Drain the oil and dip it in the sugar syrup for sometime and take it out. Enjoy!

Yam Coconut Gravy ( Chena Theyal )

Ingredients:

Yam - 1/4 kg ( cut into pieces)

Shallots - 4-5 nos

Mustard seeds - 1/4 tsp

Coconut - 1 cup (grated)

Turmeric powder - 1/4 tsp

Red chilly powder - 1 tsp

Coriander powder - 1 tsp

Salt to taste

Tamarind - Lemon sized

Method:

1) Heat oil in pan, add mustard seeds, after spluttering, add shallots and saute till it becomes soft.

2) Now add the yam, saute for few minutes. Add 2 cups of water and let it boil for sometime.

3) Soak the tamarind in a cup of water for 5 minutes. Extract juice and discard pulp.

4) Pour the tamarind juice to the pan, add salt, simmer for sometime.

5) In another pan, add the grated coconut and fry till the color changes to dark brown.

6) Simmer and add turmeric powder, red chilly powder, coriander powder and saute for few minutes. Grind the mixture with little water till it becomes a thick paste.

7) Now add the above mixture to the yam and stir at regular interval till the raw taste goes off. Serve hot.

Idly Milagai Podi





Ingredients:

Ural dal - 1 bowl

Red chilly powder - 2 tsp

Salt to taste

Asafoetida powder - 1/2 tsp

Coriander seeds - 1/2 tsp


Method:

1) Heat the pan, add the ural dal, salt and coriander seeds and fry for few minutes.

2) Now add the red chilly powder and fry till the color changes. At last add asafoetida powder, let it cool for some time and grind it as powder.

3) Store in an air tight container.

Beans Thoran

Ingredients:

Beans - 1/2 kg (chopped)

Coconut - 1 cup (grated)

Garlic cloves - 2 nos

Cumin seeds - 1/2 tsp

Curry leaves

Salt to taste

Turmeric powder - 1/4 tsp

Red chilly - 2 nos

Mustard seeds - 1/4 tsp


Method:

1) Heat coconut oil in pan, add mustard seeds, curry leaves and red chilly. After spluttering, add the chopped beans, a bit of salt and saute for 3 minutes.

2) Fry for another 5 minutes, now sprinkle some water, simmer and close the lid.

3) Grind together coconut, cumin seeds, garlic, turmeric powder and little salt in a blender.

4) When the vegetable appears half cooked, add the coconut mixture and saute till fully cooked.

Chicken Soup

This is one of my mom's recipes. She used to give this to my baby (9 months old) , who loves it. Chicken soup is an excellent remedy for colds. I found this version of chicken soup very simple and easy to make. If you want it more spicier, just increase the amount of pepper powder and ginger.




Ingredients:

Chicken pieces - 1/4 kg (cut into small pieces)

Ginger - 1/2" (finely chopped)

Tomato - 1 (chopped)

Salt to taste

Curry leaves

Turmeric powder - 1/4 tsp

Pepper powder - 1/2 tsp

Method:

1) Heat 2 cup water in a pan, add the chicken pieces, turmeric powder and salt and let it boil for sometime.

2) When the chicken pieces appear half cooked, add the chopped ginger, tomato and curry leaves.

4) When the chicken is fully cooked, add pepper powder and serve hot.

Chicken Dry gravy (Chicken Perattal)






Ingredients:

Chicken pieces - 1/2 kg (cut into small pieces)

Onion - 2 nos (chopped)

Tomato - 2 nos (chopped)

Red chilly powder - 2 tsp

Coriander powder - 2 tsp

Salt to taste

Ginger - Garlic paste - 1 tsp

Curd - 1/2 cup

Lime juice - 1 tsp

Gram flour - 2 tsp

Curry leaves

To garnish:

Coriander leaves

Method:

1) Roast the gram flour until its color changes. Keep aside.

2) Grind the chopped onion and tomato together in a blender. ( Don't grind it as fine paste). Keep aside.

3) Now mix the onion-tomato paste, red chilly powder, coriander powder, salt, ginger garlic paste, curd, lime juice, roasted gram flour with the chicken pieces and let it marinate for 2-3 hours.

4) Heat oil in pan, add the curry leaves, then pour the mixed chicken content. Simmer and close it with a lid.

5) Keep stirring at regular intervals till the chicken is completely cooked and the gravy becomes dry and thick.

6) Garnish with coriander leaves and serve hot.

Onion - Mint Salad






Ingredients:

Onion - 1 no (chopped)

Carrot - 1 no (grated)

Tomato - 1 no (chopped)

Mint leaves - 1 tsp

Soy sauce - 1 tsp

Vegetable oil - 1 tsp

Vinegar - 1 tsp

Lime juice - 1 tsp

Red chilly flakes - 1 tsp

Ginger-Garlic paste - 1 tsp

Salt to taste


Method:

1) In a bowl, mix the oil, soy sauce and vinegar together. Stir well.

2) To it add the ginger-garlic paste and mix well. Now add the remaining ingredients (except the lime juice) and mix well.

3) At last add the lime juice and serve.

Banana Butterscotch Delight

Ingredients:

Ripe banana - 2 nos

Sugar - 1 cup

Ghee - 1/2 cup

Cream - 2 tsp





To garnish:

Whipped cream - 1 tsp

Cherry - 1 no


Method:

1) Cut the bananas into two halves and then cut each half vertically. Keep aside.

2) Heat ghee in pan, add the bananas and fry them till it turns brown in each side. Place it on the serving plate.

3) In the same pan, add the sugar, fry it in high flame, add 2 tsp of ghee, 1 tsp of water and stir well till it dissolves completely and turns brown.

4) Now off the stove and add the cream and keep stirring. Pour this mixture on the fried bananas. Garnish with whipped cream and cherry. Enjoy!

Pineapple Muffins with Vanilla Icing

Ingredients:

All purpose flour - 2 cups

Castor sugar - 1 cup

Baking powder - 1 tsp

Pineapple essence - few drops

Egg - 1 no

Ghee (or) Butter - 1/2 cup

Walnuts - 2 tsp

Orange peel - 2 tsp (chopped)

Vanilla icing cream - 1 cup





To make icing cream:

You need:

Condensed milk - 1 cup

Milk - 2 tsp

Butter - 1 cup

Vanilla essence - few drops

Sugar - 1 cup

( Beat all the ingredients together in a blender until thoroughly blend)

To garnish:

Tutty Fruity - 2 tsp




Method:

1) Shift the flour, baking powder, sugar and mix well. Beat the egg with ghee in a separate bowl until bubbles form on surface.

2) Mix the egg with the flour, put the essence, walnuts, orange peel, ghee and mix well till it becomes a thick pouring batter.

3) Preheat the oven at 250 degree. Grease the muffin maker with ghee and bake it for 11-15 minutes.

4) Let it cool for sometime, put the icing cream on top of each muffin and garnish them with tutty fruity and enjoy!

Sweet lime Cucumber Juice





Ingredients:

Sweet lime - 1 no

Cucumber (small) - 1 no (cut)

Mint leaves - 1 tsp

Sugar (or) Honey - 2 tsp


Method:

1) Extract juice from sweet lime. Blend the cucumber, mint leaves, sugar with the sweet lime juice in a blender thoroughly. Serve chilled.

Rich Fruit Cake

Ingredients:


All purpose flour - 2 cups

Cocoa powder - 1/2 cup

Castor sugar - 1 cup

Caramel syrup - 1/2 cup

Salt - 1 pinch

Garam Masala - 1 pinch

Ginger - 1/2 inch (very finely chopped)

Rum - 2 tsp

Egg - 1 no (Well beaten)

Ghee (or) Butter - 1/2 cup

Vanilla essence - few drops

Orange peel - 2 tsp (chopped)

Walnuts - 2 tsp

Cashew nuts - 2 tsp

Raisins - 2 tsp

Tutty fruity - 2 tsp

Baking powder - 1 tsp


For Caramel syrup:

Heat the pan, add 1/2 cup of sugar with 1 tsp of water and stir well in high flame until the sugar dissolves completely and appears to become a medium thick sauce like consistency.


Method:


1) Shift the flour, baking powder, cocoa powder, sugar, salt, garam masala, ginger and mix well.

2) Mix the rum with the caramel syrup and beat well. Mix ghee (or) butter with the egg thoroughly until bubbles form on surface.

3) Now mix the caramel syrup with the egg mixture and beat well. Mix this with the flour thoroughly.

4) Put vanilla essence, orange peel, walnuts, cashews, raisins and tutty fruity in the batter. Mix well.

5) Preheat the oven at 250 degree. Grease the baking bowl with ghee (or) butter. Pour the batter in it and bake it for 12-15 minutes.

Cappuccino Butter Cookies




Ingredients:

Nescafe Cappuccino powder - 1 sachet

Milk - 1/2 cup

Ghee (or) Butter - 1 cup

All purpose flour - 2 cups

Baking powder - 1/4 tsp

Castor sugar - 1/2 cup


Method:

1) Mix the cappuccino powder with milk and whisk well till cream form on surface. Keep aside.

2) Mix the flour, sugar and baking powder together and shift well. Now add the cappuccino mixture, ghee and make it a stiff dough.

3) Preheat the oven with the baking plate at 250 degrees.

4) Now make small balls, flatten on top and place the cookies on the plate and bake it for 15-19 minutes for crispy cookies.

Condensed Milk - 1 tsp

Sugar - 1 tsp

Vanilla essence - few drops

Vanilla icing cream - 1 tsp

Cashew nuts - 1 tsp

Walnuts - 1 tsp

Method:

1) Blend all the ingredients together in a blender until well blend.

Kitchen Mishaps

Hi friends,

These are the recipes which i am posting for kitchen mishaps event by malar. There are of

course so many to list down, but just for a remembrance i took pictures of only two: my favorite

two. Love to share those to all my friends here.


1) Rich Fruit Cake:


Rich fruit cake looks really rich, isn't it?. Well it does tasted very good, but instead of maida i

dropped rice flour in it..lol...The story is, the maida got over and i didn't know it, my maid had

put rice flour in the same bottle and stored it in the same place where maida was originally there.

And thus the confusion, i didn't know it was the rice flour till it came out as biscuit instead of soft

spongy cake. As the taste was good, it got over by evening, Everyone ate it as biscuit..haha!


Well i tried it the very next week end with maida, and now after repeated failures i got it

right!...It was good and the recipe is there in my drafts, will post it soon!






2) Wheat Halwa:


This is another disaster, which is suppose to be a halwa. But it tasted too sweet that nobody

could have even half a piece. The ingredients were wheat flour, jaggery and ghee. It was my try

actually ( just thought of combining all these together).

Simple Pulisheri (Curd Curry)

Ingredients:

Soar curd - 5 cups

Gram flour - 2 tsp

Turmeric powder - 1/2 tsp

Salt to taste

Mustard seeds - 1/4 tsp

Curry leaves

Red chilly - 3 nos (cut)


Method:

1) Put the gram flour, salt and turmeric in the sour curd and blend thoroughly.

2) Heat oil in pan, add mustard seeds, curry leaves, red chilly. After spluttering, pour it in the curd mixture and serve.

Pineapple Coconut Cake with Caramel Sauce







Ingredients:

All purpose flour - 2 cup

Castor sugar - 1 cup

Caramel syrup - 1/2 cup

Baking powder - 1/2 tsp

Pineapple essence - few drops

Coconut powder - 1/2 cup

Pineapple - finely chopped (1/2 cup)

Rum - 2 tsp

Ghee - 1/2 cup

Egg - 1 no (well beaten)





Method:

1) Roast the coconut powder a bit in a separate pan till its color changes a bit. Keep aside.

To make caramel syrup:

Heat pan, put 1/2 cup sugar and keep stirring for 2 minutes, then add 1 tsp of water and stir till it is fully dissolved and becomes a bit thick (sauce like consistency).


2) After doing caramel syrup, put the chopped pineapple in it and keep stirring, now add the coconut powder and again keep stirring till the pineapple appears fully cooked. Keep aside and let it cool.

3) In a bowl add the flour, sugar, baking powder and mix well. In another bowl, beat the egg and ghee together till bubbles form on its surface. keep aside.

4) In the pineapple-coconut mixture, add the rum and egg, mix thoroughly. Now put this content in the flour bowl and mix till it becomes a pouring consistent batter.

5) Grease the baking bowl with ghee or butter. Pour the mixture in it. Preheat the oven at 250 degree and bake it for 10-12 minutes.

Give a standing time of 5 minutes.
