Chicken Lollipop

Ingredients:

Chicken wings - 6-7 nos

Green chillies - 2-3 nos

Onion - 1 no

Ginger - 1 inch (chopped)

Garlic - 3 pods (chopped)

Coriander leaves

Curry leaves

Tomato ketchup - 1 cup

Soy sauce - 1 cup

Egg - 1 no

Corn flour - 1 tsp

Maida - 1 tsp

Chilly powder - 1 tsp

Salt to taste

Ginger-Garlic paste - 1 tsp

Cheese - 1 strip (chopped)

Bread crumbs - 1 cup




Method:

To make the lollipop:

1) Cut the chicken wings into two halves. Chop off the end bone.

2) Now pull the flesh of the front part and mould it in form of a lollipop.


To make the recipe:

1) In a bowl, mix the tomato ketchup, soy sauce, ginger-garlic paste, grated cheese, a little salt and beat well till well blend.

2) Pour it in the lollipop and mix well. Let it marinate for 1/2 hour.

3) In another bowl, beat the egg with corn flour, maida, chilly powder. Keep aside.

4) Heat oil in pan, dip the marinated lollipop's in the egg-corn mixture, roll over the bread crumbs simmer and deep fry in batches. (till well cooked and crispy). Keep aside.

5) After frying, in another pan, add 1 tsp of oil, add onions and saute till it turns soft, now add the ginger, garlic, green chillies, coriander leaves, curry leaves, little salt and saute till it is all mixed up well.

6) Now add 2 tsp of ketchup, 2 tsp of soy sauce and mix well for 3 minutes. Arrange the fried lollipop pieces in a serving plate. Pour the onion mixture above these pieces and serve hot.

Prawns Tomato Dry Gravy

Ingredients:

Prawns (small) - 1/2 kg

Tomato - 2 nos (chopped)

Onion - 2 nos (chopped)

Cumin seeds - 1 tsp

Mustard seeds - 1/4 tsp

Salt to taste

Curry leaves

Peanut powder - 1/2 tsp

Turmeric powder - 1/4 tsp

Chilly powder - 1 tsp

Coriander powder - 1 tsp


Method:

1) Heat oil in pan, add cumin seeds, mustard seeds, curry leaves. After spluttering, add the onions an saute till it turns soft.

2) Now add peanut powder, turmeric powder, coriander powder, chilly powder and saute for few minutes. Add tomatoes and saute for another 5 minutes.

3) Now add prawns, salt, little water, stir and close it with a lid. Stir at regular intervals till the gravy becomes dry and the prawns are well cooked. Serve hot.

Eggplant Stir Fry

Ingredients:

Eggplant - 1/2 kg (cut into cubes)

Onion - 1 no (chopped)

Cumin seeds - 1 tsp

Mustard seeds - 1/4 tsp

Curry leaves

Salt to taste

Turmeric powder - 1/4 tsp

Chilly powder - 1 tsp

Coriander powder - 1 tsp


Method:

1) Heat oil in pan, add mustard seeds, cumin seeds and curry leaves. After spluttering, add the onions and saute till it becomes soft.

2) Now add turmeric powder, chilly powder and coriander powder and saute for 2 minutes. Add the egg plant, salt and stir well.

3) Simmer and close it with a lid. Stir at regular intervals till the vegetable appears completely cooked. Serve Hot.

Cashew Tea Cake

Ingredients:


All purpose flour - 3 cups

Cashew nuts - 1 cup

Baking powder - 1 tsp

Vanilla essence - few drops

Egg white - 1 no

Butter - 1 cup

Castor sugar - 2 cups


Method:

1) Mix the flour, sugar, cashew, baking powder and shift well.

2) Beat the egg white with butter till bubbles form on surface. Pour this egg content in the flour and mix well. Put essence and mix thoroughly.

3) Grease the baking plate with butter. Preheat the oven at 250 degree, pour the batter in the baking bowl and bake it for 20 minutes @ 180 degree or till fully baked.

Set aside for cooling for an hour and then serve.

Ingredients:

Chicken - 1/2 kg

Onion - 2 no (chopped)

Tomato - 2 no (chopped)

Bay Leaf - 1 no

Cloves - 3 nos

Cinnamon stick - 1 no

Turmeric powder - 1/4 tsp

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Garam masala - 1 tsp

Salt to taste

Curry leaves



Method:

1) Heat oil in pan, add curry leaves, cinnamon stick, cloves, bay leaves. Saute for a minute.

2) Add the chopped onions, saute till it becomes soft. Now add turmeric powder, chilly powder, coriander powder, garam masala, stir well.

3) Add chopped tomatoes and saute till it becomes soft. Now add the chicken pieces, little water and salt, stir once, simmer and close it with a lid.

4) Keep stirring at regular intervals till the gravy appears thick. Serve hot.

Yam Fry

Ingredients:

Yam - 1/2 kg

Chilly powder - 1 tsp

Turmeric powder - 1/4 tsp

Salt to taste


Method:

1) Cut the yam into small lengthy pieces. Keep aside.

2) Put chilly powder, salt and turmeric powder. Sprinkle some water and mix it well. Let it marinate for 10 minutes.

3) Heat oil in pan and deep fry the marinated yams (first few minutes in simmer till fully cooked and then in high flame to get it crispy) in batches. Serve Hot.

Poha Appam (Aval Appam)






Ingredients:

Poha (Aval) - 1 cup

Coconut - 1 cup (grated)

Jaggery - 1 cup (grated)

Wheat flour - 1 bowl

Sugar - 1 tsp

Cardamom - 1 pod

Dry ginger - 1 inch (chopped)


Method:

1) Wash the poha, drain and keep aside.

2) Dissolve the jaggery in 1 bowl of water. Bring it to heat in a pan, stir continuously. When it starts becoming thick add coconut, cardamom. dry ginger, poha and stir well.

3) When the content becomes thick. Set aside and let it cool for sometime.

4) Now mix the flour with water and sugar and make it a thick dough. Roll it over the roti maker in form of a round pancake.

5) Stuff it with the poha and close each side. Place it in the idly cooker filling 2 cups of water. Let it get cooked for 15-20 minutes. Serve Hot.

Sabudhana Kheer

Ingredients:

Sabudhana - 2 cups

Condensed Milk - 1 cup

Sugar - 1 cup

Milk - 1 large bowl

Raisins - 2 tsp

Almonds - 2 tsp (chopped)

Ghee - 2 tsp

Cardamom - 2 nos


Method:

1) Boil sabudhana in pan with water until it appears fully cooked. Drain the water.

2) Now boil milk in a pan, simmer and keep stirring at regular intervals for 10 minutes till the milk appears a bit thick.

3) Add sugar, condensed milk, cardamom (opened), cooked sabudhana and keep stirring for 10 more minutes.

4) In a separate pan, heat ghee, add the raisins and almonds and fry for a minute. Then add those to the kheer. Serve Hot.

Spicy Gobi Fry






Ingredients:

Cauliflower - 1/2 kg (remove only the florets)

Chilly Powder - 1 tsp

Salt to taste

Garam Masala - 1/2 tsp

Turmeric powder - 1/4 tsp

Gram Flour - 1 cup

Rice Flour - 1 cup

Bread Crumbs - 1 cup


Method:

1) Boil the florets of cauliflower in 3 cups of water with turmeric powder and a pinch of salt till the cauliflower appears fully cooked.

2) Mix the rice flour and gram flour with 1/3 cup of water in a bowl. Add chilly powder, garam masala and salt to it and mix well.

3) Heat oil in pan, when the cauliflower is fully cooked, dip each floret in the flour mix, roll it over the crumbs and deep fry in oil. Serve Hot.

Potato Cheese Sandwich

Ingredients:

Potato - 1 no

Cheese - 1 slice (grated)

Salt to taste

Dry Mango Powder - 1 tsp

Garam Masala - 1/4 tsp

Bread Slices - 2 nos

Butter - 1 tsp


Method:

1) Pressure cook the potato till fully cooked. Keep aside.

2) Spread butter in each side of the bread, Keep aside.

3) Now mash the cooked potato, add dry mango powder, garam masala, cheese, salt and mix well with hand.

4) Stuff this mixture between two breads and toast them in sandwich toaster. Serve Hot.

Ingredients:

Cocoa powder - 1 tsp

Chocolate Syrup - 2 tsp

Sugar - 1 tsp

Milk - 1 glass


For Chocolate Syrup:

Melt Chocolate bars or any kind of chocolates in a pan, till it becomes a syrup.


Method:

Grind all the above ingredients in a blender till well blend. Pour it in a serving glass, add some crushed ice and serve chill.

Raw Mango Pickle & Happy Valentines Day To All

Ingredients:

Raw Mango - 2 nos (very finely chopped)

Red chilly powder - 3 tsp

Asafoetida powder - 1 pinch

Mustard seeds - 2 tsp

Red chilly - 2 nos

Curry leaves

Salt to taste


Method:

1) Marinate the chopped raw mango with salt for 2-3 hours. Then add red chilly powder to it, mix well.

2) Grind mustard seeds and add asafoetida powder, Now add this mixture to the mango . Heat oil in pan, add red chilly, mustard seeds, curry leaves, after spluttering pour it in the mango mixture and mix well.

3) Store it in an air tight container and serve.

Dry Ginger Coffee (Chukku Coffee) & An Award





Ingredients:

Coffee Powder - 1

Milk - 1 cup

Dry Ginger Powder - 1 tsp

Pepper Powder - 1 pinch

Jaggery (or) Sugar - 1 tsp


Method:

1) Boil milk, simmer and add coffee powder, sugar, mix well. Now add dry ginger powder, pepper powder and stir well. Serve Hot.

Strawberry Mint Milkshake

Strawberries - 6-7 nos

Sugar (or) Honey - 2 tsp

Milk - 1 cup

Mint leaves - 1 tsp


Method:

1) Grind all the above ingredients together until well blend. Drain the juice and pour it in a serving glass. Add some crushed ice and serve chill.

Ingredients:

Chicken pieces - 1/2 kg (cut into small pieces)

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Garam masala - 1/2 tsp

Turmeric powder - 1/4 tsp

Salt to taste

Curd - 1 cup


Method:

1) Wash and cut the chicken into small pieces and keep aside.

2) Add all the other ingredients to the chicken pieces, mix well and let it marinate for 2-3 hours.

3) Heat oil in pan, add these marinated pieces in batches and deep fry in medium flame for sometime till it appears brown and cooked. Serve hot.

Cooked Rice - 1 bowl

Salt to taste

Mustard seeds - 1/4 tsp

Cumin seeds - 1/4 tsp


Method:

1) Heat oil in pan, add the mustard seeds and cumin seeds, after spluttering, add the grated raw mango and green chillies.

2) Saute them for few minutes, add salt and saute for another 5 minutes. Now add the cooked rice, stir well for 2-3 minutes. Serve Hot.

Ingredients:

Broccoli - 1/2 kg

Onion - 1 no (finely chopped)

Tomato - 1 no (finely chopped)

Red chilly powder - 1 tsp

Coriander powder - 1 tsp

Turmeric powder - 1/4 tsp

Mustard seeds - 1/4 tsp

Cumin seeds - 1/2 tsp

Salt to taste


Method:

1) Cut the florets of the broccoli, wash them and keep aside.

2) Heat oil in pan, add the mustard seeds and cumin seeds, after spluttering, add the onions and saute for few minutes till they turn brown and soft.

3) Add the tomatoes, chilly powder, coriander powder, turmeric powder and saute for 5 minutes.

4) Now add the broccoli, salt, little water, saute for 5 minutes, simmer and close the lid. Saute at regular intervals till the vegetable is fully cooked and all the water evaporates and it appears thick. Serve hot.

Ingredients:

Hard boiled eggs - 5 nos

Onion - 2 nos (finely chopped)

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Mustard seeds - 1/4 tsp

Curry leaves

Turmeric powder - 1/4 tsp

Salt to taste

Coriander leaves

Method:

1) Cut the hard boiled egg into two halves and keep aside.

2) Heat oil in pan, add mustard seeds and curry leaves. After spluttering, add the onion and saute for few minutes until soft.

3) Now add the chilly powder, turmeric powder, coriander powder ans salt to it and saute till the raw tastes goes off.

4) Finally add the cut eggs and saute for few minutes, garnish with coriander leaves and serve hot.

Coconut Dry Fruit Cake With Vanilla-Choco Icing

Ingredients:

All purpose flour - 1 bowl

Baking powder - 1 tsp

Vanilla Essence - few drops

Egg - 1 no

Ghee - 1 cup

Coconut powder (or) Grated coconut - 1/2 bowl

Sugar - 1 cup

Tutty Fruity - 1/2 cup

Raisins - 2 tsp

Cashew nuts - 2 tsp

Orange peel - 1 no (chopped)


For Icing:

Vanilla Icing Cream - 1 cup

Chocolate Icing Cream - 1 cup




Method:

1) Mix the flour, baking powder, sugar, coconut powder together until well blend.

2) Beat the egg with ghee in a bowl. Now mix the egg with the flour adding essence and dry fruits and mix well.

3) Preheat the oven at 250 degree. Grease the cake bowl with ghee. Pour the batter in the cake baking bowl and bake it at 200 degree for 12-15 minutes or till completely baked. Allow it to cool for sometime before doing the icing.

4) Do the icing with the flavors of your choice.

Ice cream - 1 scoop (any flavor) - i used pineapple flavor

Pepsi (or) Coke - 1 glass

Method:

Put 1 scoop of any ice cream into the serving glass and pour the cola on top of it and serve chill.
