Banana Almond Cake

Ingredients:

Banana - 3 nos

Almonds - 1 cup

All purpose flour - 1 bowl

Baking powder - 1 tsp

Cashew nut - 1 tsp

Sugar - 1 cup

Butter - 1 cup

Egg - 1 no





Method:

1) Shift the flour, sugar, baking powder and mix well.

2) Beat the egg with butter till bubbles form on surface. Mix the egg mixture with the flour.

3) Blend the banana's in a blender till well blend. Mix it with the flour. Mix some almonds and cashew with it. Garnish some almonds on top. Grease the bowl with butter. Pour the batter in it. Pre heat the oven at 250 degree and bake it for 20 minutes at 180 degree or till fully baked.

Rava Dosai and an Award










Ingredients:

Sooji, rava - 2 cups

Rice flour - 1/2 cup

Curd - 1/2 cup

Salt to taste

Ginger - 1 inch

Green chillies - 2 nos (chopped)

Curry leaves

Peppercorns - 1 tsp

Cumin seeds - 1 tsp

Ghee - 1 tsp

Method:

1) Blend rava, rice flour and curd with little water, make a thin batter, add salt. Stand the batter for at least 6 hours.

2) Chop the ginger, green chillies and curry leaves. Keep aside.

3) Crush the peppercorns and cumin seeds. Heat the ghee and fry the peppercorns and cumin seeds in it and add to the batter.

4) Mix the chopped ginger, chillies, curry leaves into the batter. Stir well.

5) Grease the tava with oil, pour the batter in form of a round pancake. Cook till it is crisp and golden in color. Remove and serve hot.

Baby Potato Fry and Reposting for Spotlight Summer Event

Baby Potato Fry:

Ingredients:

Baby Potatoes - 1/2 kg (peeled)

Chilly powder - 1 tsp

Salt to taste

Garlic - 2 pods

Turmeric powder - 1/2 tsp

Mustard seeds - 1/4 tsp

Cumin seeds - 1/4 tsp

Orid dal - 1 tsp

Onion - 1 no (chopped)


Method:

1) Pressure cook the potatoes till fully cooked. Keep aside.

2) Put chilly powder, salt, turmeric powder, mix well and let it marinate for 20 minutes.

3) Now heat oil in pan, add mustard seeds, garlic, cumin seeds, orid dal. After spluttering, add onion and saute till it turns soft.

4) Add the marinated potatoes, saute for a while, simmer and close the lid. Saute at regular intervals till all the raw taste goes off. Serve hot.

Simple Pepper Salad (Summer Special)







Ingredients:

Cucumber (small) - 3-4 nos (chopped)

Tomato - 2 nos (chopped)

Onion - 1 no (chopped)

Salt to taste

Pepper powder - 1 tsp

Lime juice - 2 tsp


Method:

1) Mix all the chopped vegetables in a serving bowl, sprinkle some pepper power, salt and mix well. At last pour the lime juice on top, mix and serve.

Simple Cooker Sambar

Ingredients:

Beans - 1 cup (chopped)

Tomato - 1 no (chopped)

Shallots - 1 cup (peeled)

Raw mango - 1/2 cup (cut)

Potatoes - 1/2 cup (cut)

Yam - 1/2 cup (cut)

Drumstick - 1 cup (cut)

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Salt to taste

Turmeric powder - 1/4 tsp

Sambar masala - 1 tsp

Mustard seeds - 1/4 tsp

Red chilly - 2 nos

Tamarind - 1 lemon sized

Toor Dall - 1 cup


Method:

1) Soak the tamarind in water for 5 mins, extract juice and discard pulp. Keep aside.

2) Pressure cook the toor dal till it is fully cooked, Mash it and keep aside.

3) Now heat oil in a pan, saute the shallots for a while, then put tomatoes and saute till it turns soft.

4) Put the shallot, tomatoes, all vegetables, chilly powder, salt, tamarind juice, coriander powder, sambar masala, little water (if needed) with the cooked toor dal in cooker and again pressure cook till 5-6 whistles or till the vegetables are fully cooked.

5) In another pan, heat little oil, add mustard seeds, red chillies, after sputtering pour it in the sambar and mix well. Serve with hot rice.

Okra Peanut Masala

Ingredients:

Okra (Ladies finger) - 1/2 kg (chopped)

Garlic - 2 pods

Chillies (green) - 2 nos (chopped)

Onion - 1 no (chopped)

Red chilly powder - 1 tsp

Salt to taste

Peanuts - 1/2 cup

Mustard seeds - 1/4 tsp


Method:

1) Heat oil in pan, add okra, little salt and fry till it turns little dark and crispy. Spread it in a tissue paper.

2) Now heat little oil in pan, add mustard seeds, garlic, after spluttering, add peanuts and fry for a minute, add onion and saute till it becomes soft.

3) Now add chillies, chilly powder, salt and saute for 2 minutes. Add the fried okra and saute for 5 minutes in low flame (add more chilly powder according to your taste). Serve hot.

Crunchy Choco Coconut Cookies (Eggless)

Ingredients:

All purpose flour - 2 cups

Cocoa powder - 1/2 cup

Demerara sugar - 1/2 cup

Coconut - 1/2 cup (grated)

Butter - 1/2 cup

Baking powder - 1 tsp

Milk - 1/4 cup

To garnish:

Cashew nuts - 1 tsp





Method:

1) Shift the flour with cocoa powder, sugar, baking powder, coconut and mix well.

2) Slowly add milk, butter and blend well till it becomes a thick and soft dough.

3) Preheat the oven with crusty plate at 250 degree. Now grease the plate with butter, make small balls of the dough, flatten on top and place it on the plate. (leave gap between each cookies).

4) Place a cashew on top of each cookies and bake them at 200 degree for 11-12 minutes of till it appears crunchy. Set aside to cool.

Mix Veg Dosa Batter

Ingredients:

Carrot - 1 no (grated and peeled)

Potato - 1 no (peeled and cut)

Beans - 2 nos (chopped)

Spinach - 1 cup (chopped)

Tomato - 1 no (chopped)

Turmeric powder - 1/2 tsp

Dosa Batter - 1 large bowl

Garlic - 2 pods

Cumin seeds - 1 tsp

Salt to taste


Method:

1) Pressure cook all the vegetables with salt, cumin seeds, garlic and turmeric until fully cooked. Keep aside.

2) Now drain the water and blend all the cooked vegetables(with little water) in a blender into a fine paste. Mix it with the dosa batter.

3) Heat tawa, spread oil, now pour the batter in form of round pancake and cook both sides till it becomes brown n crispy on both sides. Serve hot with chutney.

Broccoli Cutlet

Ingredients:

Broccoli florets - 1 cup

Potatoes - 1 no (peeled)

Maida - 1 cup

Egg - 1 no

Chilly powder - 1 tsp

Dry mango powder - 1 tsp

Salt to taste

Corn - 1/2 cup

Cashew - 1/2 cup

Bread crumbs - 1 cup


Method:

1) Pressure cook the broccoli and potatoes together till both are fully cooked. Mash it together and keep aside.

2) Now mix it with corn, salt, chilly powder, dry mango powder, cashew and mix it all together.

3) Beat the egg with maida till it becomes soft. Keep aside.

4) Heat oil in pan, make small balls of the mixture, dip it in maida-egg mixture, roll it over bread crumbs and deep fry it in oil till it turns brown and crispy. Serve hot with ketchup.

Corn-Peanut Masala

Ingredients:

Corn - 1 cup

Peanuts - 1 cup

Egg - 1 no

Brown Bread - 1 slice (cut into pieces)

Chilly powder - 1 tsp

Salt to taste


Method:

1) Beat the egg with little salt and keep aside.

2) Heat oil in pan, add the corn and peanuts together and saute for a while, add chilly powder and salt to it.

3) Saute for 5 more minutes in low flame and keep aside.

4) Heat little oil in another pan, add the egg and keep stirring till the egg becomes completely cooked and appears scrambled.

5) Now add the corn n peanuts with the egg mixture and mix it well, add the bread pieces to it and stir well. Serve hot.

Healthy Broccoli Dosai and Awards

Ingredients:

Broccoli florets - 1 cup

Toor dal - 1 cup

Salt to taste

Turmeric powder - 1/4 tsp

Dosa Batter - 1 bowl


Method:

1) Pressure the broccoli with toor dal and turmeric powder till fully cooked.

2) Mash the cooked vegetable in a blender with little salt. Pour this mixture in dosa batter and mix well.

3) Heat the tawa, pour the batter in form of round pancake and cook both sides till it turns brown. Serve hot.

Brown Muffins n Happy Vishu to all

Ingredients:

All purpose flour - 2 cups

Egg white - 1 egg

Baking powder - 1 tsp

Vanilla essence - few drops

Raisins - 1 tsp

Almonds - 1 tsp

Demarara sugar - 1 cup

Ghee - 1 cup




Method:

1) Shift the flour with sugar, baking powder and mix well.

2) Beat the egg white with ghee till bubbles form on surface. Keep aside.

3) Now pour the egg in flour mixture adding raisins, almonds, essence and mix well.

4) Grease the muffin maker with ghee, pour the batter filling half of each hole. Preheat the oven at 250 degree and bake it at 200 degree for 11-12 minutes or till fully baked. Set aside to cool.

Spring Onion Cutlet

Ingredients:

Spring onions - 1 bunch (chopped - including the onion and spinach)

Sweet corn - 1 cup

Dry mango powder - 1 tsp

Red chilly powder - 1 tsp

Salt to taste

Potatoes - 2 nos

Peas - 1 cup (cooked)

Bread crumbs - 1 cup

Maida - 1 cup



Method:

1) Pressure cook the potatoes until fully cooked. Keep aside.

2) Mix the spring onions with chilly powder, dry mango powder, salt, peas, sweet corn, potatoes. Mash it all together.

3) Mix the maida with 1/2 cup water. Keep aside.

4) Heat oil in pan, make round balls of the mixture, dip it in the maida, roll it over bread crumbs and deep fry in simmer till it becomes brown. Serve hot.

Keerai Paruppu Kootu

Ingredients:

Keerai - 1 bunch (chopped)

Shallots - 1/2 cup

Toor dal - 1 cup

Mustard seeds - 1/4 tsp

Cumin seeds - 1 tsp

Tomato - 1 no (chopped)

Turmeric powder - 1/2 tsp

Salt to taste

Red chilly - 2 nos


Method:

1) Pressure cook the dal, a pinch of salt with turmeric powder until well cooked. Keep aside.

2) Heat oil in pan, add mustard seeds, cumin seeds. After spluttering, add shallots, saute till it turns soft.

3) Add tomatoes, salt, saute for 5 minutes, now add the keerai, sprinkle some water, simmer and close the lid. Saute at regular intervals till it is well cooked.

4) In oil in another pan, add red chillies, saute for a minute. Add the cooked dal to it and stir well.

5) Now mix both the dal and keerai together and mix well. Serve hot.

Turmeric powder - 1/2 tsp

Salt to taste


Method:

1) Mix the chilly powder, salt and turmeric with the potatoes, sprinkle some water, mix well and let it marinate for 2 hours.

2) Heat oil in pan, add these potatoes and deep fry in simmer, till it turns golden, cooked and crispy. Serve Hot.

Onion Pepper Dosa

Ingredients:

Dosa Batter - 1 bowl

Onion - 2 nos (finely chopped)

Pepper powder - 1 tsp

Lime juice - 2 tsp

Idly podi - 1 tsp (optional)

Method:

1) Mix the onion with pepper powder and lime juice. Keep aside.

2) Heat the tawa, spread oil (or) ghee, spread the batter in form of a round pancake, sprinkle the onion mixture on top , sprinkle idli podi on top, close it with a lid.

3) When the base side is cooked, turn it over. When both sides are cooked. Transfer it in a serving plate and serve hot.

Shallots Thoran

Ingredients:

Shallots (small onions) - 1 large bowl (peeled and chopped)

Green chillies - 3 nos (chopped)

Urad dal - 1 tsp

Mustard seeds - 1/4 tsp

Curry leaves


Method:

1) Heat oil in pan, add the mustard seeds, curry leaves and urad dal. After spluttering and when the dal turns brown, add the chillies and saute for a minute.

2) Add the chopped shallots, simmer and saute at regular intervals till the shallots turn transparent and soft. Serve Hot.

Note: You can also add grated coconut at last.

Okra Moru Curry





Ingredients:

Sour Curd - 4 cups

Okra (Ladies finger) - 1/4 kg (chopped)

Dry chillies - 3 nos

Fenugreek seeds - 1 tsp

Curry leaves

Garlic - 4 cloves (chopped)

Ginger - 1 inch (chopped)

Green chillies - 2 nos (chopped)

Onion - 1 no (chopped)

Tomato - 1 no (chopped)

Salt to taste

Turmeric powder - 1/2 tsp


Method:

1) Blend the curd with 1/2 cup of water in a blender. Keep aside.

2) Heat oil in pan and deep fry the okra, stir at regular intervals, till the vegetable becomes crispy. Drain them in a tissue paper. Keep aside.

3) Heat 2 tsp of oil in the same pan, add garlic, fenugreek seeds, curry leaves, dry chilly, saute them for few minutes.

4) Add the green chillies, ginger and onion, saute till the onion becomes soft. Now add the tomato, salt and saute till it becomes soft.

5) Now add turmeric, off the stove, add the fried okra and curd. Stir continuously while adding curd. Serve hot.

Chilly Rasam

Hey guys,

Saw this recipe in a tv channel and tried it..Was really good, so wanted to share this with all of you!

Ingredients:

Green chillies - 3 nos (chopped)

Garlic cloves - 5 nos (chopped)

Ginger - 1 inch (chopped)

Salt to taste

Tamarind - Lemon sized

Pepper powder - 1/2 tsp

Asafoetida powder - 1/2 tsp

Curry leaves

Method:

1) Soak Tamarind in hot water for 5 minutes, Extract juice and discard pulp. Keep aside.

2) Heat oil in pan, add the chopped chillies, ginger, garlic and saute for 5 minutes till the color changes a bit.

3) Now add the curry leaves and saute for a minute. Add the tamarind juice with 1 cup of water, add salt and let it boil for sometime.

4) At last add some pepper powder, asafoetida powder, stir for a minute. Serve hot
