Spicy-Tangy Veg Salad

Ingredients:

Onion - 1 no (finely chopped)

Raw Mango - 1/2 piece (cut)

Carrot - 1 (chopped)

Tomato - 1 no (finely chopped)

Cucumber - 1 no (finely chopped)

Lime juice - 2 tsp

Peanuts - 1 cup (pressure cooked with little salt)

Pepper powder - 1 tsp

Salt to taste

Dry mango powder - 1/2 tsp

Chaat masala - 1 tsp


Method:

1) Mix all these ingredients. Close and keep aside for 5-10 minutes. Serve!

Simple Beans Thoran

Ingredients:

Beans - 1/2 kg (chopped)

Red chilly - 2 nos

Turmeric powder - 1/4 tsp

Pepper powder - 1 tsp

Salt to taste

Mustard seeds - 1/4 tsp


Method:

1) Heat oil in pan, add mustard seeds, red chilly, after spluttering, add the chopped beans, saute for a minute.

2) Now add little salt, sprinkle some water, simmer and close the lid. Saute at regular intervals, when the vegetable appears half cooked, add turmeric powder, pepper powder and mix well.

3) Saute till it appears fully cooked. Serve hot.

Egg Pirattal




Ingredients:

Egg - 4-5 nos

Red chilly powder - 1 tsp

Turmeric powder - 1/2 tsp

Mustard seeds - 1/4 tsp

Salt to taste

Curry leaves


Method:

1) Boil the egg in water till it is fully boiled. Peel, cut into two halves, keep aside.

2) Heat oil in pan, add mustard seeds, curry leaves, after spluttering, add the hard boiled eggs and fry for a minute.

3) Now add salt, red chilly powder, turmeric powder, simmer, mix well (without breaking it), close the lid.

4) Saute at regular intervals till the raw taste goes off. Serve hot.

Mutton Fry



Ingredients:

Mutton - 1/2 kg

Ginger-Garlic paste - 1 tsp

Egg White - 1 no (well beaten)

Red chilly powder - 1 tsp

Coriander powder - 1 tsp

Mutton masala powder - 1 tsp

Salt to taste

Curd - 1 cup

Method:

1) Mix all the ingredients together and let it marinate for 1 hour.

2) Heat oil in pan, add the marinated mutton pieces, and deep fry till it is fully cooked and turns brown. Serve hot.

Spring Onion Kootu


Ingredients:

Spring onions - 1 bunch (chopped)

Toor dal - 1 cup

Red chilly - 2 nos

Onion - 1 no (chopped)

Tomato - 1 no (chopped)

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Garam masala - 1/2 tsp

Salt to taste

Mustard seeds - 1/4 tsp

Cumin seeds - 1/2 tsp


Method:

1) Heat oil in pan, add cumin seeds, onion and saute till it becomes soft. Now add the tomatoes and saute for few minutes.

2) Add the chopped spring onions, salt, chilly powder, coriander powder, garam masala, little water, simmer and close the lid.

3) Pressure cook the toor dal till fully cooked and keep aside.

4) Heat oil in a separate pan, add mustard seeds and red chillies, after spluttering, add the cooked dal to it and mix well.

5) When the spring onions appears fully cooked and the raw taste is completely gone, add the above dal mixture to this and stir well. Saute at regular intervals till the content becomes little dry. Serve hot.

Beans Thoran with Coconut

Ingredients:

Beans - 1 kg (chopped)

Coconut - 1 cup (grated)

Turmeric powder - 1/4 tsp

Cumin seeds - 1 tsp

Garlic - 2 pods

Pepper powder - 1/2 tsp

Salt to taste

Mustard seeds - 1/4 tsp

Red chilly - 2 nos


Method:

1) Heat oil in pan, add mustard seeds, red chilly. After spluttering, add the chopped beans, salt, pepper powder, saute for few minutes.

2) Sprinkle some water,simmer and close the lid. Blend the grated coconut with cumin seeds, garlic and turmeric powder in a blender.

3) When the beans appears half cooked, add this coconut mixture with it and stir at regular intervals till it appears fully cooked and the raw taste disappears. Serve hot.

Mutton Baby Potato Gravy

Ingredients:


Mutton - 1/2 kg

Baby potatoes - 1/2 kg

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Salt to taste

Cumin seeds - 1 tsp

Mustard seeds - 1/4 tsp

Turmeric powder - 1/4 tsp

Cinnamon stick - 1 inch

Ginger - Garlic paste - 1 tsp

Tomato - 1 no (chopped)

Onion - 1 no (chopped)

Mutton masala - 1 tsp


Method:

1) Pressure cook the baby potatoes till fully cooked. Peel the potatoes and keep aside.

2) Heat oil in pan, add mustard seeds, cumin seeds. After spluttering, add ginger-garlic paste, cinnamon stick, saute for a minute.

3) Add onions and saute till it becomes soft. Add tomato, little salt and saute till it becomes soft.

4) Add chilly powder, turmeric powder, coriander powder, mutton masala, salt and saute for few minutes. Now add the baby potatoes, mutton pieces, little water, stir well, simmer and close the lid.

5) Saute at regular intervals till the meat is well cooked. Serve hot.

Mutton - 1/2 kg

Onion - 1 no (chopped)

Tomato - 1 no (chopped)

Chilly powder - 1 tsp

Coriander powder - 1 tsp

Salt to taste

Cumin seeds - 1 tsp

Mustard seeds - 1/4 tsp

Curry leaves


Method:

1) Heat oil in pan, add mustard seeds and cumin seeds. After spluttering, add the onion and saute till it becomes soft.

2) Now add tomatoes and saute for 2 minutes. Add chilly powder, coriander powder, salt and saute for 5 minutes in low flame.

3) Add mutton pieces, little water, stir and close the lid. Saute at regular intervals till the gravy becomes very dry and the meat is fully cooked. Serve hot.

Mango - Orange Juice

Ingredients:

Mango - 1 no (cut into pieces)

Orange juice - 1 cup

Honey (or) sugar - 1 tsp


Method:

1) Peel the mango and blend it with orange juice and sugar in a blender.

2) Drain and pour it in a serving glass with some crushed ice and serve.
