Garlic-Chilly Dry Chutney

Ingredients:

Garlic pods - 3 nos

Red chillies - 2 nos

Salt to taste

Coconut oil -1 tsp

Method:

1) Grind the garlic pods and red chillies with a pinch of salt in a blender. (Don't powder it too much)

2) Transfer it in a serving bowl, add 1 tsp of coconut oil, mix well and serve with hot dosas and idlies.


Note: You can also fry these (garlic and red chillies) separately before grinding with salt.

Ingredients:

Chickpeas - 1 bowl

Coconut - 1 cup (grated)

Red chilly - 3 nos

Mustard seeds - 1/4 tsp

Curry leaves

Salt to taste


Method:

1) Soak the chickpeas in 2-3 cups of water overnight. Pressure cook the peas with a pinch of salt. Drain the water and keep aside.

2) Heat oil in pan, add mustard seeds, curry leaves and red chilly. After spluttering, add the cooked chickpeas stir once.

3) Now add the grated coconut and stir 2-3 times. Serve hot.

Fried Dal Kozhukattai

Ingredients:

Moong Dal - 1 cup

Jaggery - 1 cup (grated)

Coconut - 1 cup (grated)

Cardamom powder - 1 pinch

Rice flour - 1/2 cup

Maida - 1 cup


Method:

1) Fry the moong dal in a pan till it becomes light brown. After it gets cooled, grind it in a blender till fine powder.

2) Mix the grated jaggery, coconut, cardamom powder, fried dal together. Keep aside.

3) Now mix the rice flour, maida with little water and make it a thick dough. Roll the dough and stuff the above content inside the dough.

4) Place it in idli maker, and cook for 15 minutes. Serve hot.

Ingredients:

Rice Flour - 1 cup

Maida - 1 cup

Jaggery - 2 cups (grated)

Coconut - 2 cups (grated)

Cardamom powder - 1 pinch


Method:


1) Mix the grated jaggery , coconut and cardamom powder together. Keep aside.

2) Mix the rice flour and maida with 1 cup of water to make a thick dough.

3) Roll the dough in a roti plate, stuff the above ingredient inside and cook in the idli maker till its completely cooked. Serve hot.

Badam Cashew Milkshake

Ingredients:

Almonds - 5-6nos

Cashew - 3 nos

Milk - 2 cups

Cardamom powder - 1 pinch

Saffron - 1 pinch

Sugar - 1 cup


Method:

1) Soak almonds in a cup of water for 2 hours. Peel the skin and keep aside.

2) Mix the peeled almonds and cashew in a blender till fine paste.

3) Boil milk in pan, simmer for sometime. Add sugar, almonds/cashew paste and keep stirring.

4) Add saffron and cardamom powder and keep stirring till it becomes a little thick.

5) Pour it in a serving glass and serve hot/chilled.
