Tomato Rasam Soup

Tomato - 3 nos

Asafoetida powder - 1 tsp

Pepper - 1/2 tsp

Cumin seeds - 1/2 tsp

Garlic - 2 pods

Tamarind juice - 1/2 cup

Salt to taste

Turmeric powder - 1 pinch


To garnish:

Coriander Leaves



Blend the tomatoes in a mixer to make a juice. Keep aside. Now in the same blender, add pepper, cloves and garlic and blend it to powder. Heat little oil in pan, add the pepper, garlic mixture, add cumin seeds and saute for a while. Now add asafoetida powder, pour the tamarind juice, tomato juice, salt, turmeric powder simmer for few minutes. Close it with a lid. Now drain the rasam and pour the soup in a bowl, garnish with coriander leaves and serve hot.

Tomato Chilly Chutney



Tomato - 1 no (chopped)

Onion - 1 no (chopped)

Garlic - 3 pods

Green Chillies - 2 no (vertically cut)

Coriander leaves

Salt to taste


Heat oil in a pan, add onion, garlic and saute till the onions appear soft. Now add green chillies and saute for sometime. Add the chopped tomatoes, little salt and saute for sometime till the veggie's appear cooked. Now at last add coriander leaves, saute a little, take it off the stove and close it with a lid for sometime. Blend this chutney in a mixer till completely blend. Serve with hot dosas.

Raw Mango and Veggie Salad






Raw Mango - 1 no (finely chopped)

Onion - 1 no (chopped)

Tomato - 1 no (chopped)

Puffed Rice - 1 cup

Baby Cucumber - 2 nos (chopped)

Green Chillies - 2 nos (chopped)

Chaat Masala - 1 tsp

Salt to taste

Pepper powder - 1/2 tsp

Corn - 1/2 cup




Mix all the ingredients together, close it for sometime and serve.

Cashew Burfi

Cashew nuts - 1 cup

Sugar - 1 cup

Milk - 2 cups

Vanilla Essence - few drops

Ghee - 1 tsp







Grind 2 tsp of sugar in a blender. To that add the cashew nuts and blend till it becomes powdered. Now in a pan, pour milk and let it boil for sometime. Simmer and add the remaining sugar, vanilla essence to it and keep stirring. Now add the cashew nut powder and keep stirring at regular intervals till the burfi becomes very thick. Now grease a plate with ghee and pour the content to it. Let it cool for sometime. Now cut it in shapes with a knife greased with ghee. Refrigerate for sometime and then serve.

Quicky Picky

Onion Pickle:





Onion - 1 no (finely chopped)

Green chillies - 1 no (finely chopped)

Lime juice - 3 tsps

Salt to taste


Just mix and squeeze all the ingredients together.



Red chilly Pickle::




Red chilly Powder - 1 tsp

Salt to taste

Lime juice - 3 tsp


Just mix these ingredients together.

Green Moong Dal Gravy

Green Moong dal - 2 cups

Coconut - 1 cup (grated)

Cumin seeds - 1 tsp

Turmeric powder - 1/4 tsp

Salt to taste

Shallots - 3-4 nos


Fry the dal in a pan, till the color turns light. Now pressure cook the dal with 2/3 cups of water. Keep aside. Now mix the grated coconut, little salt, shallots, cumin seeds and turmeric powder in a blender till well blend. Put this mixture in the cooked dal, simmer and let it boil for sometime. Serve hot with rice.

Cauliflower Poriyal




Cauliflower - 1 no

Mustard seeds - 1 tsp

Cumin seeds - 1 tsp

Green chillies - 2 nos (finely chopped)

Curry leaves

Salt to taste

Turmeric powder - 1 tsp



Cut the cauliflower into large pieces, Boil water, add the pieces in it and let it boil for 5 minutes. Now chop those pieces and keep aside. Heat oil in a pan, add mustard seeds, curry leaves and cumin seeds, after spluttering, add the cauliflower, green chillies, saute for sometime. Now add little water, turmeric powder, salt. Saute at regular intervals till the water dries up completely and the vegetable appears fully cooked. Serve hot.

Fruit Cake







All purpose flour - 2 cups

Baking soda - 1 tsp

Cinnamon powder - 1 tsp

Salt - 1 pinch

Raisins - 1 tsp

Cashew nuts - 1 tsp

Walnuts - 1 tsp

Ghee - 1 tsp

Egg - 1 no (well beaten)

Demerara sugar - 1 cup

Essence - few drops



Preheat the oven at 250 degree. Grease the baking bowl and sprinkle some flour on it. Beat the egg with essence, keep aside. Mix with the flour, demerara sugar, all nuts, cinnamon powder, baking soda and shift well. Now to this add the beaten egg and mix well in single direction, till it appears a smooth batter. Pour this in the baking bowl and bake it for 25-30 minutes@250 degree or till fully baked.

Onion - 1 no (finely chopped)

Tomato - 1 no (finely chopped)

Cucumber - 1 no (finely chopped)

Green chillies - 1 no (finely chopped)

Chilly vinegar - 1 tsp

Peanuts - 1/2 cup

Potato chips - 1/2 cup (crushed)

Corn - 1/2 cup

Peas - 1/4 cup

Salt to taste

Pepper powder - 1 tsp


Mix all the ingredients in a large bowl and serve.

Honey Nuts Sandwich with Chocolate sauce







Bread Slices - 2 slices

Cashew nuts - 1 tsp

Walnuts - 1 tsp

Raisins - 1 tsp

Almonds - 1 tsp

Honey 2 tsp

Cherry - 2 (chopped)

Chocolate syrup - 1 tsp

Butter - 1 tsp


Spread butter in both the bread slices, keep aside. In a bowl, add honey, nuts, cherry and mix together till it blends well. Now apply this mixture in one of the bread, top it with chocolate syrup (or) sauce. Place the other bread on top and toast them in sandwich toaster. Serve hot.

Nut Bread Chocolate

Bread slices - 4/5 nos

Cashew nuts - 1 tsp

Raisins - 1 tsp

Almonds - 1 tsp

Walnuts - 1 tsp

Milk - 1/2 cup

Dark chocolate chunks - 1 cup


Method:


Crush all nuts into tiny pieces, keep aside. Heat the pan, add the chocolate chunks till it melts completely, add milk and keep stirring, add the nut pieces and stir till it blends completely. Now take a bread, soak it in water, take out immediately, place it in palm. Now take some melt chocolate, place it in the middle of the bread and close the bread, so that the chocolate appears stuffed inside the bread. Now heat oil in pan, add these bread- chocolate slowly, and fry till it appears brown. Serve hot.

Scrambled Egg and Onion Masala Sandwich



Egg - 1 no (well beaten with little salt)

Bread - 2 slices

Onion - 1 no (finely chopped)

Coriander powder - 1 tsp

Salt to taste

Red chilly powder - 1/2 tsp

Tomato - 1 no (slice cut)

Butter - 2 tsp

Sandwich spread - 1 tsp

Peanuts - 1 tsp


Method:


Spread butter and sandwich spread in each bread slice, keep aside. In a pan, heat oil, add the chopped onion and saute till it becomes soft. Now add coriander powder, chilly powder and little salt and saute for 3 minutes in low flame. Now pour the beaten egg and keep stirring till it appears scrambled. Now place this onion masala, along with the slice cut tomatoes, peanuts in between two bread slices and toast in a sandwich toaster. Serve hot.

Potato Peas Curry

Ingredients:


Potato - 3/4 nos

Peas - 1 cup

Tomato - 2 nos (chopped)

Onion - 2 nos (chopped)

Turmeric powder - 1/2 tsp

Green chillies - 3 nos (chopped)

Salt to taste

Mustard seeds - 1 tsp

Cumin seeds - 1 tsp


Method:

Pressure cook the potatoes till fully cooked. In a pan, heat oil, add mustard seeds and cumin seeds, after spluttering, add onions and saute well, till it turns soft. Now add green chillies, tomatoes and saute for some time. Add little water, turmeric powder, salt and stir. Add the cooked potatoes and peas, and let it boil for sometime till the gravy becomes thick. Serve hot with rotis.

Green Dal Kozhukattai

Ingredients:

Green Moong Dal - 1 cup

Jaggery - 1 cup (grated)

Coconut - 1 cup (grated)

Cardamom powder - 1 pinch

Raisins - 2 tsp

Wheat flour - 2 cups

Salt to taste




Method:


To make the dough, add required amount of water and salt. Knead thoroughly adding few drops of oil in between till it becomes a soft and thick dough. Keep aside. In a pan, add the green moong dal with 1 cup of water and let it boil for sometime till the dal appears completely cooked. Now mix the cooked dal with the grated jaggery, coconut, cardamom powder and raisins and mix well. Divide the dough into small balls. On a roti maker, flatten one ball of dough with your hand. Using the rolling pin, roll out the dough into a thin, round patty about 5 inches in diameter.

Take small amount of the green dal stuffing, place it in the centre and close the dough. Apply oil in the idly cooker plates, place these stuffing's on it and cook for 15 mins or till fully cooked. Serve Hot.

White Pumpkin Petha

Ingredients:

White pumpkin - 1/4 kg washed and cut into pieces

Slaked lime or (sunnabhu in Tamil) - 1 tsp

Sugar - 1 cup



Method:

Soak the cut pieces of white pumpkin in 1 cup of water and slaked lime for more than half a day. Then wash them in clear water. Poke the pumpkin pieces with a small fork. Keep aside. In a pan, add 2 cups of water, add sugar and keep stirring continuously, till the water turns to a thick sugar syrup. Now add the pumpkin pieces and continue stirring. Take it off and let it cool for sometime. After it gets cooled, the sweet appears thick, break them into pieces and serve.

Semiya Uppuma

Ingredients:

Semiya - 2-3 cups

Peas - 1/2 cup

Mustard seeds - 1 tsp

Orid dal - 1 tsp

Curry leaves

Salt to taste

Turmeric powder - 1 tsp

Green chillies - 2 nos (finely chopped

Carrot - 1 no (finely chopped)


Method:

1) Roast brown the semiya in a dry pan till light brown. Keep aside.

2) In a pan, add oil, mustard seeds, orid dal, curry leaves. After spluttering, add the carrot, peas and fry for sometime. Now add 1 cup of water, salt, close the lid and let it boil for sometime.

3) When the vegetables appear cooked, add turmeric powder, little more salt, stir well.

4) Add the semiya and stir at regular interval till the semiya appears fully cooked and dry. Serve hot with chutney.

Coconut Dry Chutney



This is the dry version of coconut chutney, which we usually have with rotis or kanji. This is indeed a very very simple and easy to make chutney.

Ingredients:

Coconut - 1 cup (grated)

Red chilly - 2/3 nos

Red chilly powder - 1 tsp

Salt to taste

Method:

1) Put all this ingredients in a blender and blend it well. Serve.

Chilly Potato and Peanut Salad

Ingredients:

For Chilly potato fry::

Potato - 2 nos (cut to pieces)

Red chilly flakes- 5 nos of chillies

Salt to taste

For Salad::

Peanuts - 1 cup

Onion - 2 nos (finely chopped)

Tomato - 2 nos (finely chopped)

Cucumber - 1 no (finely chopped)

Green chillies - 2 nos (finely chopped)

Salt to taste

Ginger-Garlic paste - 1 tsp

Chat Masala - 1 tsp

Lime juice - 1 tsp


Method:

For fry::

1) Pressure cook the potatoes till fully cooked.

2) Mash the potatoes with salt and red chilly flakes. Mix all together.

3) Heat oil in pan, make small balls of this potato and deep fry in oil till it becomes brown. Keep aside.

For the salad::

1) Mix all the ingredients for salad in a serving plate.

2) With this add the fried potato balls ( if u want, u can even cut this) and mix together. Serve.
